Come out today, December 29th, Sunday, as we “need” to sample our barrels. In actuality, we do need to sample our barrels to see how they are aging, to map out blends and to top them off. Barrels don’t leak, per se, but rather wine evaporates through the staves which creates ullage, or a very thin atmosphere in the barrel and this thin atmosphere produces micro-oxidation, which can enhance fruitfulness in the wines. Additionally, oak imparts flavors and older barrels, inert of oak, still add complexity to the flavors of the wine within the barrel.
