WINEMAKING/TASTING NOTES
Cabernet Sauvignon.  The name to wine enthusiasts is “the king of red wine grapes.”  Eh, not so fast.  But it is good!  Dang good!!!  Sometimes cabernet sauvignon is lighter in color than what people expect.  I have long suspected in the marketplace the addition of coloring agents like “Mega Red” or “Ultra Purple” added to the wine.  We would never do that.

I can tell you that our 2022 cab is exceptionally light in color.  The flavors are great, but I will never be able to “pawn off” the 2o22 as a straight cab as “cab.”  No chance.  But tannins and fruit.  Bing, bing, bing.  Our 2021 has the color, the fruit, a little missing in tannins and has a hair of sweetness.  Blend the two together?  Bingo!  That’s what we did.
