Come out today, December 29th, Sunday, as we "need" to sample our barrels.  In actuality, we do need to sample our barrels to see how they are aging, to map out blends and to top them off.  Barrels don't leak, per se, but rather wine evaporates through the staves which creates ullage, or a very thin atmosphere in the barrel and this thin atmosphere produces micro-oxidation, which can enhance fruitfulness in the wines.  Additionally, oak imparts flavors and older barrels, inert of oak, still add complexity to the flavors of the wine within the barrel. We had a fun time tasting barrels on Saturday, with more to come today!

This Sunday, we will have another one of our little ol' "Out Front Ring Fires." We'll open up an older vintage or two, because wine not, right? It's a relaxing day for enjoyable conversations around something that creates a lot of mental peace -- fire. I love the snapping and crackling and the smell. Just the entire sensation of controlled fires....
